SPAGETINNI WITH SMOKED SALMON AND A CAULIFLOWER CREAM

Ingredients
  • 1 kg Spagetinni, boiled in salted water and cooled on a table with olive oil
  • ½ recipe Cauliflower cream
  • 1 jar Salmon caviar
  • 20 slices Smoked salmon
  • 100 each Baby capers
  • 1 bch Chives
  • ½ bch Chopped parsley
  • 10 each Boiled eggs
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 500 gm Cauliflower
  • 250 gm potato
  • 1.5 1t chicken stock
  • 250 gm almond meal
  • 50 gm garlic puree
  • 150 ml olive oil seasoning
  • 200 ml Pouring cream
Instructions
  1. Bring cauliflower, potato, chicken stock, almond meal and garlic puree to the boil
  2. Reduce stock until all ingredients are soft and the stock has almost evaporated
  3. Season and blend while gradually adding the olive oil
  4. Add pouring cream, and pass through a fine strainer. The finished product should be of a drizzling consistency
  5. TO PLATE THE DISH
  6. Put the spagetinni in a bowl and mix together with the cauliflower puree, salmon, herbs, and capers
  7. Twirl a small portion of the pasta around a small roasting fork and place, standing up right, in the centre of the plate.
  8. Drizzle some of the cauliflower puree around the plate and sprinkle the caviar around.
  9. Finish with spears of chives, and salmon roe

This is a old classic and popular dish we sometimes use in our catering company.
