  • 60g cream cheese
  • 30g butter
  • ¾ cup icing sugar
  • 100g tablespoons white sugar
  • 1t teaspoon ground cinnamon
  • 70g unsalted butter
  • 50g chopped pecans
  • 300g cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 2 eggs
  • 1⅓ cups diced cooked pumpkin
  • ⅓ cup olive oil
  • 1p blueberries
  1. Preheat oven to 180 degrees C)
  2. beat cream cheese until soft add icing sugar and soften butter until smooth, set aside.
  3. For the muffin batter: sift together flour, sugar, baking powder, cinnamon and salt. add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
  4. Place pumpkin mixture in muffin cups about ½ full.
  5. Bake at 190 degrees C for 20 to 25 minutes
  6. garnish with cream cheese icing and blueberry's
