This is a popular Vietnamese dipping sauce that compliments rice paper rolls, salads, beef, rice, chicken and many other dishes, it can produce a sour, sweet, salty and spicy taste, be careful when balancing the ingredients not to add too much fish sauce. We also use it in our commercial kitchens and can be found on our finger food catering menus.
- 2 garlic clove
- 3 small red chillies
- 100ml good quality fish sauce
- 100g sugar
- 60ml water
- 1 lemon juiced
- pinch salt
- Add garlic and chilli to mortar and pestle, crush to paste, add the rest of the ingredients, mix well and adjust to taste.
