Everyone loves desserts and A great lemon tart is always a crowd pleaser, it also shows culinary technique and has a good shelf life of generally a few days

Classic Lemon Tart

  • Pastry
  • 250g Butter
  • 180g Castor sugar
  • 1 Vanilla Pod
  • 2 Eggs
  • 500g Plain Flour
  • Filling
  • 6 Eggs
  • 350g Castor Sugar
  • 4 Lemons, juiced and grated rind
  • 125g Unsalted Butter - melted
  1. For Pastry
  2. Soften butter - cream butter and sugar in food processor, add in 1 egg at a time mixture will look split, remove from food processor into a bowl and add in flour by hand. When finished the ball should not stick to the sides of the bowl.
  3. Cover and rest for 30 minutes in a fridge, remove, roll over tart shell and bake at 180 deg until slightly golden
  4. Lemon Filling
  5. whisk all ingredients and add into the baked tart shell - bake at 150 degrees until center has only a slight movement - do not over cook.
