Ingredients
  • 320g unsalted butter, diced into 2mm cubes
  • 1 vanilla pod
  • 180g caster sugar
  • 1T cornflour
  • 320g plain flour
  • Icing sugar mixture for garnish
  • Lemon topping
  • 8 eggs
  • 2 finely grated lemon rind
  • 160g plain flour
  • 620g caster sugar
  • 6 lemons juiced
Instructions
  1. heat oven to 180°C,
  2. Grease a medium sized tray and line with baking paper, allowing a 2cm overhang on all sides.
  3. Melt butter in a microwave set aside to cool.
  4. Stir in vanilla and sugar, sift flours over butter mixture.
  5. Using a spatula, stir until a soft dough forms. Transfer to prepared tray.
  6. Press down and bake for 15 to 20 minutes or until golden. Remove from oven. And cool.
  7. Whisk eggs, lemon rind, flour and sugar together until smooth. Add lemon juice. Whisk to combine. Pour over base. Bake for 15 minutes or until just set. Cool garnish with icing sugar.
