1.Gather all the ingredients.

The ingredients you will need for this recipe are: 2 ounces blue cheese (crumbled) Olive oil (1 tbsp.) White wine (1 oz.) Chopped shallots (3 tbsp.) A pinch of salt  tbsp. black pepper ( fresh and cracked) sour cream (1/2 cup) Worcestershire sauce (1 tea spoon) Blue cheese melts easily so it’s important to have all the ingredients within reach.  2.Saut the shallots.

For this recipe, you will use a small saucepan. Place the pan on a stove top (medium heat) and then add the olive oil. Once the oil is warm, put in that shallots and stir. Saut until they are fully cooked and softened.  You could also substitute the olive oil for butter. 

 3. Add wine.

Add the white wine to the sauted shallots and cover the pan. Let it simmer until the wine has reduced in half. If you had increased the heat, you should n reduce it to medium heat.

  4. Add the sour cream

Put in the sour cream and let it heat to a gentle boil. Let it simmer for about 3 to 5 minutes before adding in the salt and pepper. Make sure you constantly stir as it thickens. This will prevent it from curdling or burning. If the medium heat is causing the thickened cream to burn, you should reduce it to a low flame 

  5. Add the blue cheese.

At this point you should only add about half of your blue cheese. As it melts into the pan, use a fork to mash and stir it with the cream. Repeat this procedure until only a few blue cheese lumps are visible. 

  6.Add Worcestershire sauce

Only add this sauce after the blue cheese has completely melted. Once you have added the Worcestershire sauce, stir the mixture constantly to prevent it from burning. Let it simmer for about 5 minutes until your sauce is thick enough. How can you tell the thickness is just right? The sauce perfectly coats the back of the spoon! 

  7.Add the rest of the blue cheese.

You now add the remaining blue cheese slowly making sure you stir as you do so. This will also help it incorporate into the sauce. Continue stirring until the cheese is fully incorporated, with a few lumps. 

  8.Turn off heat.

Remove the sauce from the stove top. You should do so before the cheese is fully melted as this will make your sauce runny. We are aiming for a rich and thick consistency. let it sit for about 5 minutes until it is warm. 

  9.Time to serve!

You can now serve it over your roast eat or steak. Ensure that you serve it while it is still warm as this will enable the flavor to be absorbed by the steak, making it more delicious.    Blue cheese sauce is as versatile as it is delicious.
