This day and age a lot of people are turning to vegetarianism. They have various reasons in regards to why they prefer to be a vegetarian. Some want to live a healthier life, some want to do something for mother nature and for some generally have a love of animals and can’t take eating them.

Plenty of scientific research proves the health and environmental benefits of a plant-based diet. Almost 70% of all diseases and 1/3 of all cancers are based on diet. The vegetarian diet is very healthy and helps lower your risk of chronic illnesses, obesity, diabetes, high blood pressure and cancers such as colon, prostrate, breast and lung cancer.

Eating Vegetables

You may find the taste of vegetables a little odd and bitter but worry any further. There are plenty of recipes and ways to make vegetables delicious just like the regular non-vegan foods. Here are some delicious vegetables that you can enjoy:

  1. Jamaican Rice and Peas

A simple rice dish added some coconut milk that gives a creamy taste to the dish. Sprinkle with some garlic, thyme and other spices. Kidney bean is an excellent source of protein and fibre, pair it with rice which is a good source of carbohydrates as well.

  1. Zucchini Salad

A delicious healthy salad orientated meal is offered by zucchini, refried beans and corn. Just add olive oil, lime juice and coriander and the fiesta flavour will burst into your mouth.

  1. Bean Salad

Chickpeas, kidney beans and red beans all mixed together is a power protein food. This quick and easy salad is a must try. Just add olive oil, vinegar and lemon juice.

  1. Spicy Burritos

This spicy Mexican dish is finally available for vegetarians. A protein packed burrito is filled with tofu, tomatoes, cumin, black beans and coriander. Just leave the sour cream on top of it for a healthier version.

  1. Sautéed Mushrooms

This simple and delicious meal is always on the go. The ingredients are always available in the marketplace and even the non-vegan eaters like the taste of sautéed mushroom.

Vegan Staple Source of Protein

  1. Tempeh – It is a traditional soy product from Indonesia. It’s like tofu but it is fermented and pressed to be thick and savoury. Tempeh is high in protein, dietary fibre and vitamins. It has an earthy flavour and a firm texture and is popular in vegetarian cuisine.
  1. Tofu – Tofu originates from China and is high in protein and iron and is low in calories. It is a solid food item made from soybean curd. Tofu is tasteless but once mixed with seasoning it blends well and gives a nice texture and consistency.
  1. Seitan – It is called wheat gluten. It is brown in colour, stringy in texture and chewy substance and a substitute for tofu or meat. Seitan is easy to prepare and needs no seasoning. It can be fried or baked.
  1. Nutritional Yeast – Nutritional yeast has a strong, cheesy, nutty and creamy flavour. It can be used as a substitute for cheese. Unlike cheese it lasts longer and has no cholesterol content. To make a cheesy healthy soup just sprinkle it on top.
