Chocolate Marquise recipe

Chocolate Marquise recipe is a frozen chocolate dessert made with dark chocolate, butter, sugar, cocoa, eggs, and cream.

  • • 6 egg yolks
  • • 180g caster sugar
  • • 200g dark callabeut chocolate
  • • 250g unsalted butter, diced - soft
  • • 60g cocoa powder, sifted
  • • 600ml thickened cream
  1. Spray a terrine mould with real-ease , then line the mould with glad wrap leaving 10 cm out of the terrine as excess.
  2. Mix the yolks and sugar in a glass bowl over a double boiler until thick and pale. Add chocolate and stir until melted. Add butter gradually. Remove from heat and fold in sifted cocoa. Allow to cool 30 min.
  3. whisk cream until thick - fold into chocolate mixture until full incorporated.
  4. Add to terrine mould and then freeze overnight.
